Parsley

One of the most useful garnishes, it packs large amounts of antioxidants, such as monoterpenes, phthalides and polyacetelenes, that help detoxify carcinogens. It has a high concentration of vitamin C, good folate, iron, and vitamin A, and is an excellent natural breath freshener. Tabbouleh is an East Mediterranean salad made with bulgur, parsley, onion, mint, oil, lemon juice and spices, which is a powerhouse of beneficial compounds.
