OATMEAL PANCAKES WITH BLUEBERRY SAUCE

Ingredients:
Pancakes:
1/2 oat flour
1 1/2 cup instant oatmeal
1 tablespoon baking powder
1/4 tsp. salt
1 1/2 cups oat milk

Blueberry Sauce (yields 1 1/4 cups):
2 cups fresh or frozen blueberries (unthawed and unsweetened)
1/2 cup water, boiling
2 teaspoons stevia

Recipe:
1. Spray a nonstick frying pan with cooking spray; heat the pan.
2. Mix all the pancake ingredients together; pour batter onto hot pan.
3. Turn when edges are firm and tops are covered with bubbles.
4. Prepare blueberry sauce by adding fruit to water in saucepan; cook 10 minutes; remove from heat.
5. Put sauce in blender and process until smooth.
6. Return puree to saucepan and boil for 5 minutes.
7. Remove from heat; cool. Add stevia and stir well.

Serve pancakes also with other nonfat spreads such as Apple Sauce , Prune Topping or Raspberry Jam Note: Oats are high in fiber and help in lowering cholesterol. They are a rich source of B vitamins for energy, healthy nerves and muscles.
