BUCKWEAT PANCAKES WITH APPLE SAUCE

Ingredients:
Pancakes:
1 1/2 cups buckweat flour (dark)
2 egg whites, lightly beaten
1/2 cup skim milk (zero fat)

Apple sauce (yields about 1/2 cup):
2 apples, peeled, cored and sliced
1 cup water
1/4 teaspoon cinnamon
2 teaspoons granulated fructose
Recipe:
1. Blend pancake ingredients together.
2. Pour a little batter into a hot non-stick frying pan sprayed with Pam.
3. When top is bubbly turn to other side.
4. To make apple sauce, cook apples with water in saucepan until soft.
5. Put the apples in a food processor or blender and blend until pureed.
6. Return to saucepan and cook until it is thick enough to spread. Cool.
7. Add fructose and cinnamon and serve.
