FROZEN ORANGE-APRICOT WHIP

Ingredients:
1 egg white, beaten stiff
4-5 medium apricots, pitted (do not peel for extra fibre)
1/2 cup unsweetened orange juice
2 Tbs. lemon juice
2 tsp. grated orange rind
2 1/2 cups Nonfat Whipped Cream
Recipe:
1. Beat egg white until stiff peaks form.
2. Pit and chop apricots with skin. Blend to a pulp in blender or food processor.
3. Fold apricot pulp into whites.
3. Blend in juices and rind.
4. Prepare whipped cream according to recipe instructions.
5. Fold apricot mixture into cream.
6. Put into refrigerator tray; freeze to mush consistency.
7. Remove apricot mixture to blender and beat quickly until smooth.
8. Return to tray and continue freezing.
9. Let thaw for a few minutes before serving.
