APPLE PUDDING

Ingredients:
2 cups buckwheat bread crumbs
1/2 teaspoon grated lemon rind
1 tablespoon lemon juice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
4 apples, peeled, cored and sliced
1/2 cup raisins
1/3 cup hot water
Recipe:
1. Press 1/3 of crumbs in a baking dish sprayed with cooking spray
2. Combine apples, raisins, rind, lemon juice and spices.
3. Lay half of apple mixture over crumbs.
4. Sprinkle with 1/3 of crumb mixture and 1/3 of apple mixture.
5. Add remaining apples to dish.
6. Add 1/3 cup hot water.
7. Sprinkle with remaining apple and crumb mixtures.
8. Bake apple mixture in a preheated oven set at 375 F/190 C for 30 to 40 minutes.
