1 cup chopped dried prunes
1 cup chopped dried apricots
2 cups chopped dried apples
3 cups raisins
1 cup chopped dates,
1 cup chopped dried figs
1 cup chopped dried pears
2 teaspoons orange rind
1/2 cup unsweetened orange juice
2 1/2 cups buckwheat flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup water or skim milk
1/4 cup rum1 1/2 teaspoons cinnamon
1/2 teaspoon powdered clove
1/2 teaspoon allspice
1 teaspoon mace
5 egg whites, beaten
1 teaspoon vanilla
1. Combine dried fruit in large bowl.
2. And orange rind and orange juice over fruit.
3. Combine flour, salt and baking powder.
4. Blend water, rum and spices.
5. Add beaten egg whites to creamed mixture and beat thoroughly.
6. Add flour mixture, prepared fruit mixture and vanilla and stir until fruits are well distributed.
8. Push batter into 10-inch/25cm tube pans sprayed with cooking spray,
9. Bake at 280 F/140 C for 3 3/4 hours.
