RICE SALAD (Maintenance)

2 cups cooked brown basmati rice, cooled
3 scallions, finely chopped
1 medium red pepper, chopped
1/2 cup raisins
1/2 cup Nonfat French Dressing
Salt and pepper
1 tablespoon chopped parsley
1. Mix cooked rice with vegetables.
2. Pour over the dressing and toss well together.
3. Adjust seasoning and serve sprinkled with chopped parsley.
