PASTA WITH SPINACH AND RAISINS

Ingredients:
16-ounce/450g package penne or other tubular pasta
2 garlic cloves, minced
1/4 cup white wine
1 large bunch spinach (about 1 pound/450g), coarsely chopped
3 tablespoons golden raisins
1 vegetable bouillon cube
4 medium ripe tomatoes, peeled and chopped
or
16-ounce/450g can chopped tomatoes
3 tablespoons Parmesan cheese (for maintenance only)
Recipe:
1. Prepare pasta as label directs. Drain and keep warm in saucepan.
2. In skillet, saute garlic in wine until soft.
3. Add spinach, raisins, dissolved bouillon cube and 3/4 teaspoon salt. Cook until spinach wilts.
4. Add spinach mixture to pasta in saucepan.
5. Add tomatoes and heat through.
6. Spoon pasta mixture on serving dish.
7. Sprinkle Parmesan cheese (if on weight loss omit cheese).
