PASTA SHELLS WITH QUICK TOMATO SAUCE

Ingredients:
16-ounce/450g package pasta shells
2 medium onions, finely chopped
1 can (28-ounce/800g) Italian plum tomatoes
3 cloves garlic, finely chopped
3 Tbs. chopped fresh basil leaves
1/4 tsp. oregano
Salt and pepper
Recipe:
1. Boil pasta shells until tender but firm. Drain and keep warm in hot serving dish.
2. Put the tomatoes, garlic, and onion in blender and mix well.
3. Remove from blender and add basil, oregano, salt and pepper.
5. Pour over warm pasta.
Serves:
4 to 5
Notes:
If you like you can warm the sauce before pouring onto the pasta. Tomatoes are full of vitamin C which enhances the absorption of some of the iron they contain but also the iron present in the whole wheat pasta. They also provide follate or folic acid,
