VEGETABLE MOLD

Ingredients:
1 envelope plain gelatin
1 cup water
2/3 cup Nonfat Italian Dressing (see p. )
11/2 cups low-fat cottage cheese (1% fat), beaten in mixer
until creamy
1/4 cup finely chopped celery
1/4 cup finely chopped green pepper
1/4 cup thinly sliced radishes
1/4 cup finely chopped cucumber
2 Tbs. finely chopped onion
Lettuce leaves
Recipe:
1. Prepare Nonfat Italian Dressing according to recipe.
2. Soften gelatin in 1/4 cup of the water.
3. Heat remaining water to lukewarm.
4. Dissolve gelatin and add to warm water.
5. Stir in dressing and cottage cheese.
6. Cool mixture until it starts to thicken.
7. Fold in vegetables and pour into a mold. 8. Chill until firm.
9. Unmold on lettuce leaves and serve

Notes:
Radishes are members of the cruciferous family that fights cancer. They also contain folic acid and vitamin C which prevents the destruction of folic acids in foods.
