Ingredients:
3/4 cup quinoa
4 large ripe tomatoes
1 medium onion, finely chopped
1/2 teaspoon celery salt
1/4 garlic powder
1/4 teaspoon paprika
1 tablespoon finely chopped parsley
2 tablespoons plain nonfat yogurt
1/4 cup Nonfat Italian Dressing
Lettuce leaves
4 large ripe tomatoes

Recipe:
1. Boil quinoa as label directs; drain and cool.
2. Cut tomatoes in half and scoop them out.
3. Prepare Nonfat Italian Dressing according to recipe
4. Combine cooked quinoa with onion, celery salt, garlic powder, paprika, parsley, yogurt and dressing.
5. Fill the tomato halves with quinoa mixture.
6. Serve on lettuce leaves.
