DARK RAISIN MUFFINS

Ingredients:
2 cups whole wheat pastry flour (sifted) or other gluten-free flour (use a binder such as 1 Tbs. flaxseed mixed with 2 Tbs. water)
2 tsps. baking powder
1 tsp. cinnamon
1 cup dark raisins
1 cup rice milk
1/2 cup Apple Sauce
Recipe:
1. Combine all dry ingredients together in a bowl.
2. Mix milk with Apple Sauce; add to dry mixture blending well.
3. Spray 12 nonstick muffin cups with cooking spray.
4. Fill muffin cups 2/3 full.
5. Bake for 15-20 minutes in a preheated oven set at 400F/200 C.

Raisins are a good source of potassium which benefit those suffering from high-blood pressure. They also contain iron, vitamin B2 for tissue repair, and vitamin B6 which combats premenstrual tension and anemia.
