SULTANA AND PEAR MUFFINS

Ingredients:

2 cups whole wheat flour
5 teaspoons baking powder
1/2-1 cup sultanas/golden raisins
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger powder
3/4 cup chopped fresh or canned pears
1 cup skim milk (zero fat)
1 egg white, lightly beaten
Recipe:
1. Stir the dry ingredients with the spices in a bowl.
2. Add the chopped pears.
3. Add the milk and the egg white to the dry ingredients and blend well.
4. Drop batter into 12 non-stick muffin tins sprayed with lecithin (Pam).
5. Fill muffin tins 2/3 full.
6. Bake in a preheated 400 F/200 C oven for 20 to 25 minutes
