MIXED FRUIT MUFFINS

Ingredients:
2 cups whole wheat flour
5 teaspoons baking powder
1 teaspoon mixed spice
1/2 teaspoon cinnamon
1/4 cup chopped dried apricots
1/4 cup chopped dried dates
1/4 cup chopped dried figs
1/4 cup golden raisins
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
1 cup skim milk (zero fat)
2 tablespoons brandy
1 egg white, lightly beaten
Recipe:
1. Combine dry ingredients together.
2. Mix the milk, brandy and egg white together and add to the dry ingredients; blend well.
3. Spray 12 muffin tins with lecithin (Pam) or use a non-stick muffin pan, and fill each cup 2/3 full.
4. Bake in a preheated 400 F/200 C oven for 20 to 25 minutes or until golden brown.
