2 cups (8 ounces/225g) quick-cooking oatmeal
3/4 tsp. salt
1/2 tsp. yeast
1 1/2 cups lukewarm water
1. Mix oatmeal with the salt.
2. Dissolve the yeast in water and stir it into the oatmeal.
3. When smooth, cover and leave to stand for about an hour.
4. Heat a non-stick frying pan (6-inch/15cm) sprayed with cooking spray.
5. Pour onto the frying pan a cupful ofthe batter.
6. Cook on a moderate heat for 4-5 minutes, then turn and cook on the other side.
7. Lift off to cool and cut into pie-like pieces (quadrants).
8. Continue until all the batter has been cooked.

Oats are high in fiber and can help reduce cholesterol. They also contain zinc which is often lost in foods that have been processed. A good source also of thiamine and magnesium for healthy muscles and nerves
