SPINACH MOULDS

Ingredients:
2 pounds/900g fresh spinach
2 tablespoons lemon juice
1 teaspoon salt
3/4 cup Nonfat Tartar Sauce
Lettuce leaves
Recipe:
1. Wash fresh spinach leaves and put in saucepan without water.
2. Simmer gently until spinach is soft and tender; drain well.
3. Season with lemon juice and salt.
4. Pack spinach solidly in small individual non-stick ramekins or molds.
5. Chill them, turn the spinach inside out.
6. Serve on lettuce leaves topped with a teaspoon or more of Nonfat Tartar Sauce.
