Ingredients:
1 1/2 cups lentils
6 cups water
1 medium onion, chopped finely
1/2 cup chopped celery
2 cloves garlic, chopped finely
1 bay leaf
1 Tbs. tomato concentrate
1 vegetable bouillon cube
1 Tbs. vinegar
Pinch of black pepper
Recipe:
1. Boil lentils with 6 cups water for about 30 minutes.
2. Add onion, celery, garlic, bay leaf and tomato and bouillon cube.
3. Cook for an additional 30 minutes or until lentils are tender. Add a little water if necessary.
4. Remove bay leaf and add 1 tablespoon vinegar and a pinch of pepper.

Notes:
Serving suggestion: For a nutritious lunch or light supper serve with a fresh lettuce and tomato salad. An exceptional legume packed with lots of beneficial nutrients. Loaded with fiber, they are digested slowly to help regulate glucose in the blood
