Ingredients:
1 cup dried white lima beans
4 cups water
2 vegetable bouillon cubes
4 stalks celery, chopped
2 medium onions, chopped
1 bay leaf
1 tablespoon tomato concentrate
1/4 tablespoon paprika
Salt and pepper
Recipe:
1. Soak beans in water overnight or for 12 hours.
2. Bring beans to a boil in 4 cups water and two vegetable bouillon cubes.
3. Reduce heat and simmer for 1 hour.
4. Add remaining ingredients, except paprika, salt and pepper and simmer for 30 minutes or until beans are tender.
5. Add the salt the last 10 minutes of cooking time, and paprika and pepper to taste.
