FRIED CHEESE CUBES

Ingredients:
2 eggs, beaten
Salt and pepper
1 tsp. finely chopped parsley
6 ounces/175g hard cheese, cut into 1-inch/2.5cm cubes
1 cup ground raw almonds
2-3 Tbs. olive or salad oil
Recipe:
1. Beat eggs; season with salt and pepper; add parsley.
2. Coat cheese cubes with egg mixture.
3. Roll cheese cubes into ground almonds.
4. Heat oil in pan until hot.
5. Add cheese cubes one at a time until there are 5-6 in the pan.
6. Fry until crisp and golden, then turn over. Do not fry them too long as they will melt.
7. Drain on absorbent paper and serve.

Notes:
Serving suggestion Served hot with tomato slices they make an excellent high protein breakfast or light lunch. Also very good served cold for packed lunches.
