Ingredients:
2 eggs, beaten
Salt and pepper
1 tsp. finely chopped parsley
6 ounces/175g hard cheese, cut into 1-inch/2.5cm cubes
1 cup ground raw almonds
2-3 Tbs. olive or salad oil

Recipe:
1. Beat eggs; season with salt and pepper; add parsley.
2. Coat cheese cubes with egg mixture.
3. Roll cheese cubes into ground almonds.
4. Heat oil in pan until hot.
5. Add cheese cubes one at a time until there are 5-6 in the pan.
6. Fry until crisp and golden, then turn over. Do not fry them too long as they will melt.
7. Drain on absorbent paper and serve.

Served hot with tomato slices they make an excellent high protein breakfast or light lunch. Also very good served cold for packed
