VANILLA GELATO

Ingredients:
2 envelopes plain gelatin
1/2 cup cold water
2 cups coconut milk crystals
4 cups coconut milk
2 tsp. vanilla
8 tsp. stevia
Recipe:
1. Add gelatin to cold water and let soften for 5 minutes.
2. Stir instant crystals into coconut milk, then stir in softened gelatin.
3. Cook over low heat, stirring constantly, until gelatin is dissolved. Cool.
4. Stir in vanilla and stevia.
5. Turn into refrigerator trays and freeze until firm.
6. Remove from tray and beat until smooth.
7. To serve, pipe the gelato through a large fluted pastry tube into tall glasses.

Notes:
To make ice cystals, chill coconut milk into freezer until ice crystals begin to form.
