MOCHA BRAZIL NUT ICE CREAM

Ingredients:
1 envelope plain gelatin
1/4 cup cold water
1 cup decaffeinated coffee
1 square unsweetened chocolate, melted
1 teaspoon vanilla
3 cups coconut milk
8 teaspoons stevia
1/4 cup chopped raw Brazil nuts
Recipe:
1. Soften gelatin in water.
2. Add coffee and stir until gelatin is dissolved.
3. Slowly stir in the melted chocolate; stir until smooth; cool.
4. Add vanilla, milk and stevia; mix well. If not sweet enough, add more stevia
5. Pour into refrigerator trays and freeze to a stiff mush.
6. Put cream into food processor or blender and blend until smooth and creamy.
7. Stir in Brazil nuts and freeze until firm.
8. Garnish with Brazil nuts.
