Ingredients:
1 envelope plain gelatin
1 cup cold water
2 cups low-fat cream cheese (Philadelphia Light)
8 teaspoons sugar substitute (Equal or Nutrasweet)
1 teaspoon vanilla
6 medium peaches, peeled and sliced thinly

Recipe:
1. In saucepan, sprinkle gelatin over 1/4 cup cold water; let stand for 1 minute.
2. Stir over low heat until gelatin is completely dissolved.
3. In large bowl, beat with electric mixer cheese, sugar substitute, vanilla and 3 peaches until blended. Taste for sweetness and if you like, add more sugar substitute.
4. Gradually beat in gelatin mixture and remaining 3/4 cup water until smooth.
6. Pour into spring-form non-stick pan and chill until firm.
7. Remove sides of spring-form pan; garnish top with thin slices of remaining 3 peaches.
