COCONUT CHEESE TART

Ingredients:
9-inch/23cm Starch-free Pie Shell
Filling:
2 eggs or equivalent Egg Replacer or other egg substitute
6 teaspoons dietetic maple syrup (Slim-ette)
1 cup skim milk
1/2 cup evaporated skim milk
1/2 cup low-cottage cheese (1% fat)
1/2 cup unsweetened grated coconut
Recipe:
1. Prepare piecrust according to recipe instructions.
2. Beat eggs with maple syrup in blender or food processor until creamy.
3. Add the skim milk, the evaporated skim milk and the cottage cheese and blend until smooth.
4. Add the coconut and blend well.
5. Pour mixture into prepared pie shell.
6. Bake in a preheated oven of 350 F/175 C for 45 minutes or until inserted toothpick comes out clean.
7. Serve hot or cold.
