CHOCOLATE RUM RING

Ingredients:
7 ounces/200g unsweetened chocolate
8-10 tsp. artificial sweetener
3/4 cup safflower oil
1/4 cup rum
1 1/2 cups ground raw almonds (consistency of flour)
1/4 cup chopped raw walnuts
Garnish:
1 cup Nonfat Whipped Cream
Recipe:
1. Melt the chocolate in a double boiler. Remove from heat and cool for a few minutes.
2. Pour melted chocolate in a large mixing bowl.
3. Add the sweetener and the oil. Add more sweetener if mixture is not sweet enough.
4. Add the rum and stir well; mix in the ground almonds and chopped nuts and blend well.
5. Pour the mixture into a 10-inch/25cm ring-mold sprayed with cooking spray and refrigerate for at least two hours.
7. Unmould and garnish with Nonfat Whipped Cream.

Notes:
Cocoa is the richest source of stearic fatty acid, the only saturated fat that will not raise your cholestrol. Walnuts are rich in polyunsaturated fats and almost as good as almonds in reducing your cholesterol and triglycerides.
