ALMOND BALLS

Ingredients:
1/4 cup safflower oil
1 3/4 cups ground raw almonds (consistency of flour)
1 teaspoon almond essence
1 teaspoon vanilla essence
6-8 teaspoons sugar substitute (Equal or Nutrasweet)
Coating:
1/4 teaspoon chopped raw almonds
Recipe:
1. Warm oil in saucepan.
2. Remove pan from heat and add ground almonds, almond and vanilla essence and sugar substitute; blend well to achieve a
moist paste-like mixture. Allow to cool for a few minutes.
3. Shape into walnut-size balls and coat in mixture of chopped almonds.
