ALMOND TORTE

Ingredients:
7 eggs, separated at room temperature
6 tsp. dietetic maple syrup
1 cup ground raw almonds (preferably blanched and the consistency of flour)
1 1/2 tsp. almond extract

Garnish:
2 1/2 cups Nonfat Whipped Cream
Recipe:
1. Beat for 10 minutes with electric mixer the egg yolks, the maple syrup and the almond extract.
2. Fold almonds into mixture.
3. Beat egg whites until stiff.
4. Fold egg whites into yolk mixture.
5. Fold mixture into a 10-inch/25cm ring mold sprayed with cooking spray.
6. Bake at 325 F/160 C for 45 minutes.
7. Cool for 15 minutes; place on plate or wire rack and continue cooling.
8. Prepare whipped cream according to recipe instructions.
9. Slice torte half lengthwise and fill with whipped cream .
