BAKED EGGS ON SPINACH

Ingredients:
1 tablespoon olive or salad oil
1 1/2 cups spinach, cooked and drained
Salt and pepper
1/4 teaspoon nutmeg
8 eggs
8 teaspoons grated Parmesan cheese
Recipe:
1. Brush 4 individual ramekin dishes with oil.
2. Season spinach with salt, pepper and nutmeg. Spoon over a layer of spinach in each dish.
3. Sprinkle 2 teaspoons cheese into each dish; break 2 eggs over spinach and cheese.
4. Bake in a 375 F/175 C oven for 15 minutes or until eggs are set.

Serving suggestion Serve warm from the oven, on its own, as a light lunch or as a main course with a tomato and lettuce salad.
