ANCHOVY SPREAD

Ingredients:
2-ounce/56g can anchovy fillets
1 teaspoon olive oil
1 egg yolk, hard boiled
Dash of cayenne pepper
Recipe:
1. Put anchovy fillets in a blender or food processor, add a little oil and the yolk of a hard-boiled egg, and blend until smooth.
2. Season with cayenne pepper. Mix well.
Serves:
1/4 cup
Notes:
Serving suggestion: Serve with lettuce leaves and tomato slices. It also makes an excellent pate spread on crispbreads and crackers and sprinkled with a little chopped thyme.
