MEAT LOAF

Ingredients:
1 egg or equivalent Egg Replacer or other egg substitute
1/4 cup red wine
1 medium onion, sliced
1 clove garlic, chopped
4 sprigs parsley, chopped
2 pounds/900g finely-ground beef
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon powdered thyme
Recipe:
1. Place egg, red wine, sliced onion, garlic and parsley in blender or food processor.
2. Blend until vegetables are finely chopped.
3. Mix well with ground beef and season to taste with salt, pepper and thyme.
4. Place meat loaf into an oiled loaf tin and bake for 45 minutes in a 325 F/200 C oven.

Serving suggestion Accompany with a Tossed Salad, and a side-dish of Sauteed Mushrooms with Oregano.
