Ingredients:
4 medium lamb chops
4 tablespoons olive or salad oil
1 medium onion, chopped
1 cup chopped fresh or canned mushrooms
2 thin slices smoked ham, chopped
Salt and pepper
4 slices Mozzarella cheese

Recipe:
1. Saute lamb chops in 2 tablespoons of oil until golden brown.
2. Remove and place in an oven-proof baking dish.
3. Add remaining oil to pan and saute onion, mushrooms and ham until vegetables are soft.
4. Season to taste with salt and pepper.
5. Spread mushroom mixture on top of each chop in baking dish.
6. Top each piece of meat with a slice of cheese.
7. Bake in a hot oven of 400 F/200 C for 3 minutes or until cheese is slightly melted.
