1 medium chicken, cut into serving pieces
4 tablespoons olive or salad oil
1 ripe tomato, peeled and cut into eight sections
or 1/2 cup canned plum tomatoes
1 medium onion, sliced
1 medium green pepper, sliced
1 clove garlic, minced
1 bay leaf
1 sprig parsley
1/4 cup white wine
10 button mushrooms, sliced
1 teaspoon lemon juice
Salt and pepper
1. Saute chicken pieces in oil until well browned on all sides.
2. Add tomato, onion, green pepper, garlic, parsley, bay leaf, and wine; cover and cook for 15 minutes.
3. Add the mushrooms and lemon juice and continue to cook for 15 minutes, or until chicken is tender.
4. Remove parsley and bay leaf before serving.
5. Season to taste with salt and pepper.
Remove skin before you eat the chicken.
