CHICKEN IN WINE SAUCE

Ingredients:
1 medium chicken, cut into serving pieces
4 tablespoons olive or salad oil
4 slices smoked ham
1/2 cup red wine
1 bay leaf
2 cloves, chopped
Pinch of thyme
Salt and pepper
10 small white onions
10 button mushrooms
4 tablespoons finely chopped parsley
Recipe:
1. Brown chicken pieces in frying pan with oil.
2. Add ham and brown lightly.
3. Add wine, bay leaf, cloves, thyme, onions, and salt and pepper to taste.
4. Cover and simmer for 20 minutes.
5. Add mushrooms and parsley and cook 10 minutes more.
6. Remove chicken on to a serving dish and thicken sauce slightly by boiling and steering constantly. Remove bay leaf.
7. Pour sauce over chicken pieces and serve.

Remove skin before eating the chicken.
