Ingredients:
2 pounds/900g fresh salmon, sliced into 2-inches/5cm thick
3 cups water
1 tablespoon chopped parsley
3 tablespoons olive or salad oil
1 medium onion, sliced

1/2 cup diced celery

Recipe:
1. Boil all ingredients except salmon and lemon about 20 minutes.
2. Add salmon; cover and cook 15 minutes or until tender.
3. Season to taste with salt and pepper.
4. Serve very hot with own broth.
