FISH PROVENCAL

Ingredients:
4 Tbs. olive or canola oil
1 medium onion, minced
1 clove garlic, minced
2 cups fresh or canned mushrooms, sliced
1/4 tsp. thyme
1/2 tsp. salt
1/4 tsp. pepper
1 cup canned or fresh tomatoes, peeled and chopped
1/2 cup white wine
1 pound/450g frozen haddock fillets
Recipe:
1. Heat oil in skillet and saute onion and garlic for 3 minutes.
2. Add mushrooms, thyme, salt, pepper, tomatoes and wine.
3. Place fish in center of pan and bring to a boil.
4. Sprinkle with parsley, cover and simmer for 30 minutes.

Notes:
Fat content: Haddock is a super low source of fat, less than 1g of fat per 3 oz./100g. Fish Provencal has about 14g of mainly beneficial monounsaturated fat from the oil in the recipe.
