FRESH TUNA SOUR

Ingredients:
2 pounds/900g fresh tuna fish, sliced 1 1/2-inches/4cm thick
1/4 cup olive or salad oil
2 large onions, sliced
6 tablespoons wine vinegar
4 sprigs fresh mint, chopped
Recipe:
1. Season fish with salt and pepper to taste.
2. Pour oil in skillet; heat.
3. Fry fish about 10 minutes or until brown on both sides.
4. Remove fish; set aside.
5. Cook onion slowly in same oil for about 5 minutes or until soft.
6. Add vinegar, mint or basil.
7. Cover; cook slowly 5 minutes more.
8. Place fish in hot sauce.
9. Cover and cook slowly 3minutes longer.
10. Serve very hot.
