4 tablespoons olive or salad oil
1 medium onion, chopped
8-ounce/200g can crab meat
2 egg yolks
1 tablespoon evaporated skim milk
1/4 cup sherry
Salt and pepper
1/4 teaspoon nutmeg
4 serving-size fillets of sole
1. Heat oil in a frying pan.
2. Add the onions and saute for 10 minutes.
3. Add the crab meat and cook over low heat for 2 minutes, stirring constantly.
4. Remove the pan from the heat.
5. Add the egg yolks, mixing constantly.
6. Add the milk, sherry, salt, pepper and nutmeg; mix well.
7. Divide the mixture into portions among the 4 fillets and roll each one, fastening them with toothpicks.
8. Place fillets in greased baking dish.
9. Sprinkle with a little sherry and salt and pepper.
10. Bake in a 400 F/200 C oven for 30 minutes.
