BRUSSELS SPROUTS WITH CELERY AND RED PEPPER

Ingredients:
2 tablespoons olive or salad oil
2 cups thinly sliced celery
2/3 cup finely diced red pepper
1 cup boiling water
1 pound/450g Brussels sprouts, halved
1/4 cup grated Parmesan cheese
Recipe:
1. Saute celery and red pepper in oil.
2. Cover saucepan and simmer for about 10 minutes.
3. Add 1 cup boiling water and Brussels sprouts.
4. Bring back to a boil, then simmer covered for about 5 minutes, or until sprouts are tender.
5. Remove from heat, sprinkle cheese allowing it to melt over the vegetables.
Serve hot.
