RICE CREAM WITH DATES AND ANISEED

Ingredients:
1 1/2 cups ground uncooked brown rice (consistency of flour)
5 cups water
1/2 cup chopped dates
1 teaspoon caraway seed
1 teaspoon fennel seed
1 teaspoon aniseed
Pinch of powdered ginger

Garnish:
Small amount of chopped almonds, pistachios or toasted pinenuts

Recipe:
1. Place uncooked brown rice in blender or food processor and grind to a consistency of flour.
2. Put ground uncooked rice in a saucepan with 5 cups water.
3. Add chopped dates, caraway seed, fennel seed, and aniseed and mix well.
4. Bring to a boil; simmer for 3 minutes or until liquid is absorbed. Add a pinch of powdered ginger.
5. Pour into serving dishes and allow to cool and chill until ready to serve.
6. Serve decorated with a sprinkle of chopped nuts.
