POTATOES WITH TOMATOES AND HERBS

Ingredients:
5 large potatoes
1 can (14-ounce/400g) chopped tomatoes
2 cloves garlic, chopped
2 tablespoons finely chopped fresh basil leaves
2 tablespoons finely chopped parsley
2 tablespoons finely chopped tarragon
8 corriander seeds, crushed
1/2 teaspoon Maggi seasoning
1 vegetable bouillon cube
1/2 cup water or red wine
Salt and pepper
Recipe:
1. Cook potatoes in boiling salt water until tender but firm.

2. Drain. Keep warm.
3. Mix together all the sauce ingredients and simmer for 30 minutes in a saucepan or until liquid is reduced.
4. Season with salt and pepper if necessary.
5. Pour over Potatoes
