CHOCOLATE ALMOND PIE

Ingredients:
Filling:
2 (10 oz/300 g each) packages firm tofu (1% fat)
10 teaspoons sugar substitute (Equal)
1/4 cup water
3 teaspoons vanilla
1/2 cup cocoa powder

Almond pie shell
Garnish:
Chopped almonds
Recipe:
1. Whip tofu in blender or food processor until smooth.
2. Add sugar substitute and mix well.
3. Heat water in small pan, and add cocoa powder; stir until smooth. Remove from heat, cool slightly. Add vanilla and
stir.
4. Add cocoa mixture to tofu and blend for 1-2 minutes.
5. Pour into almond pie shell and chill for 1-2 hours.
6. Garnish with chopped almonds.
