An excellent source of antioxidants, it contains four times more beta-carotene and three times more lutein than broccoli. It is high in the list of anticancer foods by virtue of the cancer antagonists it contains. It has also some fiber, folate, magnesium, calcium and potassium. Although it contains a large amount of iron, only about 2% of that is bioavailable.
Caution: Spinach is very high in oxalates and should be avoided by persons prone to manufacture stones. Eat raw or lightly cooked, as many beneficial compounds are destroyed by cooking.
