Vegetables are our storehouses of vitamins and minerals, of a very large number of beneficial phytochemicals, of various kinds of fiber, and of course some of our most delicious foods.
All fresh vegetables, preferably eaten raw, in salads, or with an appropriate dip if at all possible. If fresh vegetables are not available, give preference to frozen vegetables with no additives.
