WAFFLES WITH PRUNE TOPPING

Ingredients:
2 cups plumped pitted prunes
1 teaspoon cinnamon
1 teaspoon nutmeg
2 tablespoons lemon juice
1/8 cup granulated fructose
Recipe:
1. To plump prunes, cover prunes with cold water.
2. Bring to a boil and simmer for 10 to 20 minutes.
3. Let stand overnight in the liquor.
4. Combine plumped prunes, cinnamon, nutmeg, lemon juice and fructose.

5. Heat for a few minutes.
6. Remove from heat and let cool.
7. Store left-over topping in refrigerator.

These waffles made without any fats or oil are full of good nutrients and fiber. Prunes are a high source of soluble fiber that helps lower cholesterol, iron and beta-carotene to help prevent cancer. They are low in sodium, and have a fair amount of magnesium and potassium to normalize blood pressure.
