STEWED DRIED FRUITS

Ingredients:
Stewed Apricots:
1/2 pound/225g dried apricots
Hot water to cover fruit
Juice of 1/2 lemon
1 teaspoon stevia
Stewed Prunes:
1/2 pound/225g prunes
Hot water to cover fruit
2 slices lemon
Recipe:
Stewed Apricots:
1. Wash apricots, add water, lemon and stevia; soak for 50 minutes in saucepan.
2. Cook apricots covered, in same water, slowly for 25 to 30 minutes or until tender.
3. Remove from heat; cool and serve.
Stewed Prunes:
1. Wash prunes, add water; soak for 60 minutes in saucepan.
2. Cook prunes covered, in same water, slowly for 45 to 60
minutes or until tender.
3. Add lemon before removing from heat. Cool and serve.

Notes:
Serving suggestion For delicious tarts, prepare a Fat-free Pie Shell and spread 3 cups stewed dried fruit which have been pureed in a food processor. Top with Nonfat Whipped Cream.
