Ingredients:
2 cups parboiled brown rice (Uncle Bens or Minute Brown Rice)
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. nutmeg
2 cups skim milk (zero fat)
1 tsp. vanilla extract
1 cup rice syrup or other sweetener
4 egg whites, beaten stiff

Recipe:
1. Put uncooked brown rice in blender or food processor for about 1 minute, until it is the consistency of flour.
2. Mix ground rice, rice syrup, cream of tartar, baking soda and in a bowl.
2. Add the milk and the vanilla and beat until creamy.
4. Fold in beaten eggs carefully.
5. Pour into a 12-inch/30cm loaf sprayed with cooking spray.
6. Bake in a 325 F/160 C oven for 35 minutes, or until an inserted toothpick comes out clean.
