NONFAT WHIPPED CREAM

Ingredients:
1/2 cup instant nonfat dry milk powder
1/2 cup ice water
2 Tbs. lemon juice
1/4 cup stevia
Recipe:
1. Mix instant dry milk powder with ice water in a bowl. Water has to very cold otherwise cream will not become very fluffy.
2. Whip with blender until soft peaks form, 3 to 4 minutes.
3. Add lemon juice. 4. Continue whipping until stiff peaks form, 3 to 4 minutes longer.
5. Gradually beat in stevia
Serves:
Makes about 2 1/2 cups
Notes:
If whipped cream is not fluffy enough you can beat one egg white stiff and fold into cream. Another way of making an airy nonfat topping is to chill skim milk in the freezer until ice crystals just begin to form
