PINEAPPLE CHIFFON MOLD

Ingredients:
1 Tbs. plain gelatin
1/2 cold water
1 cup unsweetened pineapple juice
1 Tbs. lemon juice
3 egg whites, beaten stiff
1/2 cup cold water
1/2 cup rice milk
6 tsp. stevia
Pineapple slices
Recipe:
1. Mix gelatin with 1/2 cup cold water; set aside for 5 minutes.
2. Blend juices together.
3. Add softened gelatin to pineapple mixture; stir to dissolve.
4. Chill mixture until partially set.
5. Beat egg whites until stiff.
6. Beat pineapple mixture in chilled bowl to form softly rounded, peaks.
7. Fold whites into chilled pineapple mixture.
8. Add 1/2 cup rice milk with the stevia and stir well; fold into pineapple.
9. Pour pineapple mixture into mold and chill.
10. Decorate with pineapple slices and serve.
