STRAWBERRY PUDDING

Ingredients:
2 envelopes plain gelatin
1/2 cup cold water
1 cup hot rice milk
6 tsp. stevia
4 cups fresh or frozen strawberries (unsweetened)
Recipe:
1. Sprinkle gelatine over 1/2 cup water in a blender or food processor; let stand for 4 minutes.
2. Add hot milk and blend at low speed until gelatine is dissolved, about 2minutes. Cool for a few minutes.
3. Add stevia; blend at high speed until strawberries are pureed.
4. Pour into dessert dishes and chill until set.

6 to 8
