Ingredients:
3 envelopes plain gelatin
1 cup boiling water
3 1/2 cups cranberry juice cocktail, unsweetened
6 tsp. stevia
1 1/3 cups chopped apple

Recipe:
1. In a large bowl, sprinkle gelatine and pour boiling water over it; stir until completely dissolved.
2. Stir in cranberry juice and stevia.
3. Chill, stirring occasionally until mixture is consistency of unbeaten egg whites.
4. Fold in apple.
5. Turn into a 9-inch/23cm baking pan; chill until firm

Notes:
Cranberry juice cocktail is very high on vitamin C because of the added ascorbic acid.
