CRANBERRY MOUSSE

Ingredients:
2 1/2 cups cranberries
1 1/4 cup water
2 1/2 cups Nonfat Whipping Cream
1/4 cup unsweetened orange juice
Recipe:
1. Cook berries in saucepan with water until soft.
2. Blend berries in food processor or blender.
3. Return to saucepan and simmer for10 minutes. Cool.
4. Prepare Nonfat Whipped Cream.
5. Combine cranberries with orange juice.
6. Fold into whipped cream. If mixture is not sweet enough add a little fructose (2-3 teaspoons).
7. Pour into refrigerator tray and freeze.
Serves:
6 to 8
